The Best Butterscotch Monkey Bread I’ve Ever Had

This butterscotch monkey bread recipe literally melts in your mouth. Perfect for a make ahead breakfast or a family brunch, this monkey bread is easy to make and more than addictive!

Ingredients Needed for Butterscotch Monkey Bread:

Unsalted Butter: 1/2 cup. You can use salted but I find this dish doesn’t need extra richness.

Pudding Mix: Butterscotch is the flavor of choice for this recipe. However, feel free to be playful with the flavors! Chocolate pudding mix is another good choice. Maybe even try a swirl combo!

Dark brown sugar: 1/2 cup is needed for this recipe. If dark brown isn’t available, light is a good alternative.

Spices: Cinnamon. That’s it! Oh, and only 1 tsp.

Nuts: 1 cup. Chopped Pecans make for a delicious, crunch addition to this recipe. Walnuts are also a great alternative!

Bread: 24 unbaked dinner rolls. Or, a pre-made monkey bread base. Placed in a greased bundt pan.

How to Make the Butterscotch Monkey Bread

Prep the ingredients: Generously spray a 10-inch bundt pan with non-stick cooking spray. In a small bowl, microwave the butter on 50% power until melted. Add the pudding mix, brown sugar, cinnamon, salt and whisk together until fully incorporated. Set aside.

Assemble Monkey Bread: Sprinkle 1/2 cup of pecans into the bottom of the greased bundt pan. Places half the frozen rolls evenly over the pecans leaving a little space (1/4 inch) between the rolls. Sprinkle the remaining 1/2 cup of pecans and 1/2 the pudding mixture over the rolls. Repeat the process and add the remaining frozen rolls on top of the mixture, followed by more pudding mix. Leave the pan for 5-6 hours (on the countertop) or 8-10 hours (overnight) in the refrigerator. This allows it to thaw while soaking up the butterscotch, so delicious and worth the wait.

Bake it! When your ready to bake, preheat the oven to 350 degrees F and bake for 25-27 minutes. Cool for 5 minutes and serve warm. Enjoy!

  • 1/2 cup Dark Brown Sugar
  • 1 tsp Cinnamon
  • 1 cup Chopped Pecans
  • 24 Unbaked Dinner Rolls
  • Cooking Spray

Instructions
 

  • Generously spray a 10-inch Bundt pan with nonstick cooking spray.
  • Microwave the butter, butterscotch pudding mix, brown sugar, cinnamon, and salt on 50% power until butter has melted. Whisk together until incorporated.
  • Sprinkle ½ cup pecans into the pan.
  • Place half the frozen rolls evenly over the pecans leaving a little space (¼-inch) between rolls.
  • Sprinkle the remaining ½ cup pecans and ½ of the butter/pudding mixture over the rolls.
  • Add the remaining frozen rolls on top of the butter/pudding mixture (cutting the rolls where needed).
  • Top evenly with the remaining butter/pudding mixture.
  • Spray one side of plastic wrap with nonstick spray and place it loosely (sprayed-side down) over the rolls.
  • Leave the pan for 5-6 hours (on the countertop) or 8-10 hours (in the refrigerator).
  • When ready to bake, preheat oven to 350°F and bake 25-27 minutes. Cool for 5 minutes and serve warm.

Notes

  • This recipe will take at least 5 hours to thaw the dough (or 8-10 hours overnight)
