What’s in Cowboy Queso?

Have you ever tried cowboy queso? It’s basically this thick, chunky dip that is so delicious you might want to cry. I don’t personally know anyone who does cry during their first bite of it but I’m sure that would be a great trick for some people to try! If you’re looking for the perfect appetizer recipe to serve at your next party, then look no further. This easy recipe is made by simmering beer and chorizo until thickened and giving it a nice creamy texture with butter, cream cheese and cheddar cheese.

If you’re lucky enough to have leftovers, this recipe is perfect for using as a base for making quesadillas or nachos.

It’s not just delicious, it’s a party in a bowl.

Chorizo: Mild or hot, 1 package

Beer: 1 cup of a light beer, I use corona.

Cheese: You’ll need 1 package (16oz) of Velvet and 1/2 cup of Shredded Pepper Jack.

Spices: Salt (1 tsp), Onion powder (1 tsp), Garlic powder (1 tsp), and Cayenne pepper (1/2 tsp).

Tomatoes: I use Rotel with mild diced green chilis. 10 oz.

Black beans: 1 cup, rinsed and drained

Red Onion: 1/2 cup, peeled and diced. For topping.

Fresh cilantro: 1/4 cup, chopped. For topping.

Cook the meat: In a large skillet, cook Chorizo over medium heat until no longer pink, about 5 minutes, crumbling meat. Drain excess oil.

Make the Cheese: Add beer, cook until reduced slightly, 3-4 minutes, stirring occasionally. Add Velveeta, pepper jack cheese and seasonings; stir occasionally until melted. When melted, stir in rotel, beans, red onion, and cilantro.

Finish and Serve: If desired, garnish with jalapenos, additional cilantro and red onion and serve with tortilla or corn chips.

How to Serve Cowboy Queso

Additional toppings can include

  • Fresh Pico
  • Jalapeños
  • Extra Shredded Cheese
  • Extra Black Beans
  • Add cooked corn

Ingredients
  

  • 1 pkg Chorizo, mild or hot
