Gnocchi: 1 package

Pesto: 3 tbsp

Olive Oil: 2 tbsp

Parmesan: 1 cup

Walnuts: 1/2 cup

Lemon: 1/2 lemon, juiced

Arugula: 2 cups

Kosher Salt & Freshly Ground Black Pepper

How to make pesto walnut gnocchi with arugula

Step 1

Bring a pot of water to boil. Add the gnocchi and cook until they float to the top of the water. Drain and set aside.

Step 2

Meanwhile, toast the walnuts in a nonstick skillet over medium low heat, shaking or stirring to make sure they don’t burn. Set aside.

Step 3

In the same pan, on low heat, mix pesto, lemon juice and olive oil. Add gnocchi, parmesan and mix until combined. Allow to simmer for 2-3 minutes until cheese is melted. Remove from heat and immediately add arugula and walnuts and mix to combine. Top with salt and pepper and serve immediately.
