Ingredient List for the Baked Tuscan Chicken

This rich dish includes spinach, cream cheese, garlic, sun dried tomatoes and parmesan. It’s suspicious how quick and easy it is to put together this delicious meal. As a bonus, this recipe is keto friendly, gluten-free and low carb. Yay!

The list of ingredients can be found below. Ingredients – Serves 2-4 with leftovers:

Chicken breast: 1lb, about 2. Boneless, skinless and sliced horizontally. Aka butterflied.

Spinach: I buy frozen chopped spinach to add to the simplicity of this recipe. It can be thawed at room temp or microwaved via instructions. Squeezed dry in a paper towels or cheesecloth. Fresh spinach is also a great alternative! Just don’t forget to chop it.

Cream Cheese: 3oz, softened. Only a small amount is needed for this recipe but you’ll be surprised how moist the chicken is.

Heavy Cream: 1/3 cup, to soften the cream cheese mixture.

Garlic: 4 cloves, minced. Fresh pressed garlic is best!

Sun-dried Tomatoes: 1, 8oz jar. These can be found in the produce section!

Cheese: Mozzarella cheese, shredded 1 cup. Parmesan, grated 1/3 cup.

Seasonings: Kosher salt, onion powder, chili powder, black pepper, and italian seasoning.

Fresh herbs: Freshly chopped parsley and thyme.

How to make the Baked Tuscan Chicken

Prep the ingredients: Preheat the oven to 400 degrees F. In a bowl or standing mixer, beat together the cream cheese, spinach and heavy cream. Add half of the minced garlic. Add the salt, pepper, onion powder, chili powder and Italian seasoning. Beat to combine. Add the parmesan cheese and half of the mozzarella cheese. Continue beating to combine.

Assemble the Chicken: Lay the butterflied chicken breasts flat in the bottom of a large greased baking dish. Seasoning the chicken with salt, pepper and the remaining minced garlic. Spread the spinach and cream cheese mixture on top of the chicken. Top with sun-dried tomatoes, fresh parsley and thyme. Finish by topping with the remaining mozzarella and a tablespoon of oil reserved from the jar of sun-dried tomatoes.

Bake the best chicken you will ever have: Bake the Tuscan Chicken for 35 minutes: 20 loosely covered with foil and 15 uncovered. Or until cooked through at 165 degrees F (internal temp). Serve the Tuscan Chicken immediately with your choice of side! (Orzo pasta, zucchini noodles, etc.) Enjoy!

Tuscan Chicken Casserole Tips

Use your chicken leftovers! You can use your leftover chicken to make this Tuscan chicken dish. Just bake in the oven for 15 or 20 minutes, depending on the amount of chicken used.

Add a pinch of mustard powder, or cayenne for an extra kick. You can also add a tablespoon of basil pesto to the cream cheese mixture.

If you prefer a crunch topping, sprinkle the dish with breadcrumbs before inserting in the oven. Panko is a good, flaky option. Italian breadcrumbs will work well too.

Ingredients
  

  • 1 lb Chicken Breast, about 2 boneless, skinless, and sliced horizontally
  • 6 oz Frozen Chopped Spinach thawed and squeezed dry
  • 3 oz Cream Cheese softened
  • 1/3 cup Heavy Cream
  • 4 cloves Garlic, minced
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Onion Powder
  • 1/4 tsp Chili Powder
  • 1/2 tsp Black Pepper
  • 1 1/2 tsp Italian Seasoning
  • 1/3 cup Parmesan, grated
  • 8 oz Jar Sun-dried Tomatoes
  • 1 cup Mozzarella cheese, shredded
  • 1 tbsp Fresh Parsley, chopped
  • 1 tbsp Fresh Thyme, chopped

Instructions
 

  • To make the baked Tuscan chicken Casserole: Preheat your oven to 400ºF.
  • In a bowl, beat together the spinach, cream cheese, and heavy cream. Add half the garlic, salt, onion powder, chili powder, black pepper, and Italian seasoning and beat to combine. Add parmesan cheese and 1/2 of the mozzarella cheese and continue beating to combine.
  • Lay the split chicken breasts flat in the bottom of a large baking dish. Season the chicken breasts with salt, pepper and the remaining half of the garlic. Spread the spinach and cream cheese mixture on top of the chicken.
  • Top with sun-dried tomatoes then drizzle a tablespoon of oil reserved from the sun-dried tomatoes. Finish by topping the chicken casserole with mozzarella cheese.
  • Bake the Tuscan chicken casserole for 35 minutes: Cook for 20 minutes loosely covered with foil then uncover and bake 15 minutes or until the chicken is cooked through (165˚F internal temperature). Serve the Baked Tuscan Chicken immediately with your choice of sides (cauliflower rice, zucchini noodles, orzo…) – Enjoy!
