You’ll need ground beef, cavatappi pasta, onion, garlic, tomato paste, canned diced tomatoes, Italian seasoning, beef broth, red wine, butter, and grated Parmesan cheese.

How to Make Beef Ragu & Cavatappi:

Step 1

Fill a large pot 3/4 of the way up with salted water; heat to boiling on high. Add pasta when ready.

Step 2

Meanwhile, in a large, high-sided pan (or pot), heat a drizzle of olive oil on medium-high until hot.

Step 3

Add the beef and diced onion; season with salt and pepper. Cook, stirring frequently and breaking the meat apart with a spoon, 3 to 4 minutes, or until lightly browned. Add the garlic and cook another 30 seconds.

Step 4

Carefully drain off and discard any excess oil. 

Step 5

Add the tomato paste. Cook, stirring constantly, 1 to 2 minutes, or until thoroughly coated and combined.

Step 6

Add the tomatoes (carefully, as the liquid may splatter), broth and red wine; season with salt, pepper, oregano and dried basil. Cook, stirring occasionally, 4 to 5 minutes, or until slightly thickened. Then turn off heat.

Step 7

To the pan of cooked beef and sauce, add the cooked pasta, butter, and half the reserved pasta cooking water. Cook on medium-high, stirring constantly, 1 to 2 minutes, or until the butter is melted and the pasta is coated (if necessary, gradually add the remaining cooking water to ensure the pasta is thoroughly coated). 

Step 8

Turn off heat, stir in 1 cup of parmesan until melted. Serve immediately. Enjoy!
