Avocado toast with spinach and egg is an ideal breakfast that offers everything you need to start your day off right. Not only is it tasty, but it also packs a powerful nutritional punch that will give you the energy and nutrients you need to keep up with your busy schedule.

Spinach: 4oz, sautéed

Garlic: 1 tsp sautéed with spinach

Butter: 1 tbsp for frying the egg

Egg: 1 large egg, I prefer organic

Bread: Your favorite slice of bread. Brioche or whole wheat work well with this flavor profile

Avocado: 1 medium ripe, mashed

Seasonings: Kosher salt, fresh ground pepper, garlic powder, onion powder and red chili pepper flakes

How to assemble avocado toast with sautéed garlic spinach and a golden fried egg

Step 1: Sautée Spinach

Heat up a cast-iron, or nonstick, skillet on medium heat. Once hot, add extra virgin olive oil. Add fresh spinach. Stir around. Season with black pepper and little salt. Spinach should be cooked in about 3-4 minutes. Add garlic and sauté another 30 seconds. Remove from heat, set aside.

Step 2: Fry the Egg

In the same skillet, with spinach removed, place 1 tbsp of butter. Once butter is hot, crack the egg. Cook to desired doneness.

Step 3: Make Avocado Mash

While egg is cooking, slice avocado, remove pit and mash content in a small bowl. Add spices and mix thoroughly.

Step 4: Assemble toast

Once egg is cooked to liking, remove from heat. Place avocado mixture on toasted piece of bread. Top with spinach mixture. Lastly place the egg on top and seating with Everything Bagel. Enjoy!

  • 1 tbsp Olive oil
  • 1 tsp Garlic, minced powder is a good substitute
  • Kosher Salt
  • Fresh Ground Pepper

For Egg

  • 1 tbsp Butter
  • 1 large Egg per slice of bread

For Avocado Toast

  • 1 slice Bread I used brown wheat for this recipe
  • 1 ripe Avocado, mashed
  • 1/2 tsp Garlic Powderr
  • 1/2 tsp Onion Powder
  • 1/2 tsp Red Chili Pepper Flake
  • Kosher Salt & Freshly Ground Black Pepper to Taste
  • Everything Bagel Seasoning
