Ingredients
  

  • 3 large egg whites at room temperature
  • 3/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon peppermint extract
  • A pinch of salt
  • 4 oz dark chocolate, chopped

Instructions
 

  • Preheat your oven to 200°F (93°C) and line two baking sheets with parchment paper.
  • In a clean, dry bowl, beat the egg whites with an electric mixer until foamy.
  • Add cream of tartar and a pinch of salt, then gradually add the sugar while continuing to beat. Beat until stiff peaks form.
  • Gently fold in the peppermint extract, ensuring it’s evenly distributed through the meringue.
  • Transfer the meringue mixture to a piping bag fitted with a star tip. Pipe small kisses onto the prepared baking sheets.
  • Bake the meringue kisses in the preheated oven for about 1 hour and 30 minutes, or until they are dry and easily lift off the parchment paper.
  • Allow the meringue kisses to cool completely on the baking sheets.
  • Melt the dark chocolate using a double boiler or in the microwave, stirring every 30 seconds until smooth.
  • Dip the base of each meringue kiss into the melted dark chocolate, ensuring a thin layer coats the bottom. Place them on parchment paper to set.
  • Place the meringue kisses in the refrigerator for about 15 minutes to allow the chocolate to set.
