Ingredients
  

  • 8 oz about 225g dark chocolate, finely chopped (for truffle filling)
  • 1/2 cup heavy cream
  • 1/2 teaspoon peppermint extract
  • 1/4 cup unsalted butter softened
  • 1 cup crushed candy canes or peppermint candies for coating and decoration (optional)
  • 12 oz about 340g dark chocolate, finely chopped (for dipping)

Instructions
 

Prepare the Truffle Filling

  • In a heatproof bowl, combine the finely chopped dark chocolate for the truffle filling.
  • In a small saucepan, heat the heavy cream until it just begins to simmer. Pour the hot cream over the chocolate. Allow it to sit for a minute, then stir until smooth.
  • Stir in the peppermint extract and softened butter until the mixture is well combined.

Chill the Mixture

  • Cover the bowl and refrigerate the mixture for at least 2 hours or until it becomes firm enough to shape into truffles.

Shape Truffles

  • Scoop out small portions of the chilled mixture and roll them into bite-sized balls. Place the truffles on a parchment-lined tray.

Prepare for Dipping

  • Melt the additional 12 oz of dark chocolate in a heatproof bowl. Allow it to cool slightly.
  • Using a fork or dipping tool, submerge each truffle into the melted chocolate, ensuring it’s fully coated. Allow excess chocolate to drip off.
  • While the chocolate coating is still wet, sprinkle crushed candy canes or peppermint candies over each truffle for a decorative finish.

Chill Again

  • Place the dipped truffles in the refrigerator for 20-30 minutes to set.
